Cajun prawn tostadas

Ingredients

  • 1 celery stalk, thinly sliced

  • 1/2 apple, cut into match sticks

  • 4 radishes, thinly sliced

  • 1 heaped tablespoon of greek yogurt

  • small handful of fresh mint, chopped

  • Lemon juice (half a lemon)

  • 2 tortillas

  • 400g Uncooked shrimp

  • Heaped tablespoon of cajun spice mix

Method

In a large frying pan, toast the tortillas and plate them.


Coat the prawns in the cajun mix, and fry using no oil, or 1 cal spray and then place on the toasted tortillas.


In a bowl, mix the apple, celery, radish, mint, yoghurt, and lemon juice and serve over the toastadas.



Freezing and storage

  • Separate Storage: For the best quality, store the components separately. Keep the tortillas in an airtight container at room temperature, the shrimp in an airtight container in the fridge, and the chopped vegetables, fruit, yogurt, and mint in separate containers in the refrigerator.

  • Assembled: If you assemble the tostadas:
    Refrigeration: You can store them in the fridge for about a day, but the tortillas will likely become soft, and the freshness of the vegetables and fruit will diminish. The yogurt might also make everything a bit soggy.
    Freezing: Freezing the entire assembled tostada is not recommended due to the textures of the ingredients, particularly the tortillas, which will get soggy upon thawing.

  • Reheating: If you choose to reheat, do so gently to preserve the texture of the shrimp and avoid making the vegetables and fruit mushy. Re-crisping tortillas in a dry skillet or oven can help.

In summary, this recipe is best enjoyed fresh but can be stored for up to one day if refrigerated and assembled just before serving. For longer storage, keep the components separate and assemble just before eating.
