Roasted chickpeas

A quick crunchy protein-packed BBQ flavoured snack to help satisfy those cravings for something tasty.

Ingredients

  • 1 tin of chickpeas

  • 1 tablespoon of BBQ seasoning

Method

Drain the chickpeas and lay them on a baking tray and bake in the oven at a medium temperature for half an hour. You should see the chickpeas shrink and start to brown, but they should not be burning.

Remove from the oven when they are just starting to go crispy on the outside, they will still be quite soft in the middle.

Leave for 5 mintues, then season with the BBQ seasoning and put back in the oven for about 20 minutes, or until crispy.

The trick here is to let the chickpeas rest part way through the cooking phase. If you skip this phase, the chickpeas dont have time to loose enough moisture and they remain soft. The seasoning also loses flavour from being heated for too long.

Freezing and storage

Store in a lidden jar in the cupboard for as much as a few weeks.
